The Perfect Pizza

If you've ever dreamt of pulling a fragrant, crusty, naturally-leavened sourdough loaf from your home oven, this class is for you.  We'll discuss starter care and maintenance and then gain practice scaling ingredients, mixing by hand and developing dough strength over a series of stretch and folds. You'll learn the techniques for shaping, scoring and baking artisan quality bread, and everyone will go home with a professional quality banneton

-bread proofing basket- and the bread dough that we develop in class, ready to bake at home the next day. We'll share a warm loaf straight from the oven, plus a sampling of cheese and olives... the perfect end to a perfect bake. BYOB or wine and beer available for purchase.  Cost: $95

Learn how to make delicious artisan pizza with that extra bit of flavor that comes from the secretly healthy LABs (lactic acid bacteria) and wild yeast present in a naturally fermented sourdough. You'll learn every step of the process, from mixing, balling, stretching and shaping, to baking the final product.  And you'll leave with your own wild yeast levain and the knowledge, and recipes, to continue firing the perfect pizza at home.  Light appetizers to get the class started, followed by individually-made pizzas and a seasonally rotating salad.  Come hungry.  BYOB: we'll have an ice tub ready for any beer or wine you'd like to bring to enjoy with your 'za.

Sourdough Bread

You'll learn the techniques for shaping, scoring and baking artisan quality bread, as well as tips for maintaining your sourdough starter.  Everyone will go home with their own loaf, scored and baked in class PLUS a professional quality banneton -bread proofing basket- and the bread dough that we develop in class, ready to bake at home the next day. We'll share a warm loaf straight from the oven, plus a sampling of cheese and olives... the perfect end to a sourdough day.  BYOB: you are welcome to bring your own beverage -coffee, wine, -kombucha?  to enjoy in class.

Bagel Extravaganza

The best bagels ever!  Why? Because you make them yourself and nothing beats the flavor and aroma of hot-from-the-oven bagels made with a fermented, wild yeast starter.  We'll talk about maintaining your own starter culture, and using it to make fabulous bagels that -after mixing and shaping- you can boil and bake in less than 30 minutes... perfect for breakfast or brunch anytime.  Everyone will go home with rising bagels they've made in class, ready to finish at home the next day.  We'll also prepare bagels in class -plain, sesame, poppy seed, or everything- to enjoy with a topping-laden Bagel Bar: smoked salmon, cream cheese, capers, yadda yadda.  BYOB: you are welcome to bring your own beverage -coffee, wine, -kombucha?to enjoy in class.  It's the best bagel brunch in town!
